Christmas Roasted Butternut Squash & Brussels

A HEALTHY side dish to serve at your holiday dinner!

Ingredients: 1 Butternut Squash 1 Pack Fresh Brussels 1 Cup Pecans EV Olive Oil 2 TBS Pure Maple Syrup 1/2 Cup Dried Cranberries

Instructions


Loose Directions :)

  1. Dice butternut squash and drizzle with EVOO.

  2. Half brussels and drizzle with EVOO.

  3. Roast brussels and squash 20-25 minutes at 425 degrees (seperate or combined pans).

  4. With 5 minutes remaining- toss pecans on top of the vegetables and roast for 5 minutes.

  5. When done, add cooked ingredients to a large bowl and toss with 2 TBS of pure maple syrup and add 1/2 cup dried cranberries.

  6. Gently mix and enjoy :)
